We ate this for lunch and leftover for dinner the same day. Chicken Legs has requested this for our 4th of July cookout too. It is ridiculously good.
The chicken is marinated in a mixture of apple juice, brown sugar, soy sauce, lemon juice and garlic. So simple and SO delicious. You can marinate the chicken for a little as an hour or as long as overnight. We are in the overnight camp. I almost always mix up the marinade before going to bed and let the chicken hang out all night in the refrigerator. I like to get the most flavor possible.
The key to grilling juicy chicken is to pound the chicken to an even thickness. We put the chicken in a freezer ziplock bag and use a meat mallet to pound the "hump" out of the chicken. Gently pound the thick part of the chicken breast until it is about the same thickness as the thin part. This ensure that the chicken cooks evenly. No more half cook, half dry chicken!
We really LOVED this Apple Juice Grilled Chicken. It is great on its own or chopped up on top of a salad or in a wrap. We usually grill up a double batch on Sunday for lunch the whole week. LOVE easy meal prep recipes this this one!

ingredients:
- 1 cup apple juice
- 1/4 cup canola oil
- 1/4 cup packed brown sugar
- 1/4 cup soy sauce
- 3 Tbsp fresh lemon juice
- 3 garlic cloves, minced
- 6 boneless, skinless chicken breasts
instructions:
- Whisk together apple juice, oil, brown sugar, soy sauce, lemon juice and garlic. Pour over chicken and refrigerate 1 hour to overnight.
- Remove chicken from marinade and grill until done, approximately 12 to 15 mintues.
