What is an Arnold Palmer?
It's Masters Week! Yesterday I shared some crazy good Hot Ham and Pimento Cheese Sandwiches. Today I am sharing a delicious chicken recipe - Arnold Palmer Chicken. Arnold Palmer is a legendary golfer and has a famous drink named after him. We love a good Arnold Palmer - half tea, half lemonade. Last year for The Masters, I made Arnold Palmer Cupcakes - so good! This year I decided to make Arnold Palmer Chicken - Sweet Tea and Lemonade Brined Chicken. OMG! SOOOO delicious!Why Brine Chicken?
Great question! Brining chicken ensures your chicken will be tender, juicy and packed full of flavor. I mean, nobody likes dry flavorless chicken! For this Sweet Tea & Lemonade brine, I made some really strong tea and added some frozen lemonade concentrate along with salt and spices. Just heat the mixture until the salt and sugar dissolves. It is really important to let the brine cool completely before adding the chicken. I usually add some ice cubes to the cooled brine just to make sure it is cold.I let the chicken hang out overnight in the brine. Chicken Legs threw it on the grill for lunch and it was fantastic! It had tons of great flavor and it was a little tangy from the lemonade. Chicken Legs has already requested this for lunch one day this week. It is definitely a new favorite!
How to Grill Chicken Breasts
We grill a lot of chicken in our house. We have found that if you pound the chicken to an even thickness the chicken cooks evenly and stays nice and juicy. We put the chicken in a ziplock and use a meat mallet/pounder to gently pound the hump in the breast until it is about the same thickness as the rest of the chicken. We do this before we add any marinade or brine to the ziplock bag. It really makes a HUGE difference! Boneless chicken breasts need about 9 to 10 minutes on the grill to reach an internal temperature of 165ºF.We use a charcoal grill with a charcoal starter. Here is a quick video showing how to easily use a charcoal starter:

ingredients:
- 6 tea bags
- 3 cups water
- 1 cup thawed frozen lemonade concentrate
- 1/4 cup kosher salt
- 1 small sweet onion, thinly sliced
- 3 garlic cloves, minced
- 2 fresh rosemary sprigs
- 1 Tbsp freshly cracked pepper
- 2 cups ice cubes
- 6 boneless skinless chicken breasts, pounded to an even thickness
instructions:
- Bring 3 cups water to a boil in a saucepan; add tea bags. Remove from heat; cover and steep 10 minutes.
- Discard tea bags. Stir in lemonade, salt, onion, garlic, rosemary and pepper. Cool completely; stir in ice.
- Place tea mixture and chicken in a large zip-top plastic freezer bag; seal. Refrigerate up to 24 hours.
- Remove chicken from marinade, and grill until done, approximately 10 minutes.
