This Broccoli Casserole has broccoli, onion, red bell pepper and mushrooms. It also has cheddar AND parmesan cheese. It just doesn't get much better. It does take a few minutes to whisk up the sauce, but it is worth it to be able to ditch the cream of anything soup. This is definitely our new favorite way to eat broccoli. It was so good that I could have made a meal out of this yummy casserole!
We served this Broccoli Casserole with some grilled chicken. It was perfect! We both agreed that this was going into the rotation. A healthy and delicious side dish that can be enjoyed year round.
