Catalina Chicken
Catalina Chicken - only 4 ingredients!! No prep work! Just toss together and bake. SO easy!! Everyone LOVED this easy weeknight chicken dish. Easy to double the recipe for a crowd. Serve with rice, potatoes or noodles. A real crowd pleaser!
This Catalina Chicken is a super easy weeknight meal! Only 4 ingredients, including the chicken. No prep work. Just put the chicken in the pan, pour the sauce on top and bake. Easy peasy!!! I LOVE easy recipes like this one.
This Catalina Chicken is adapted from a recipe that my Mom has been telling me to make for years. Her recipe uses Thousand Island dressing. I've been hesitant to make the recipe because I very much dislike Thousand Island dressing. I decided to switch out the thousand island dressing with some Catalina dressing. Success!! If you don't like Catalina dressing, you could try French dressing.
This recipe is easy to double if you have a crowd. There are only two of us, so we ate this for dinner and lunch again the next day. It was great reheated for lunch! We served the chicken over some Homemade Chicken Rice-A-Roni. Perfect! If you don't like rice, this would also be great over some mashed potatoes or noodles.

Catalina Chicken

INGREDIENTS:
- 4 boneless, skinless chicken breasts
- 1 cup Catalina salad dressing
- 1 cup peach or apricot preserves
- 1 package Onion Soup Mix
INSTRUCTIONS:
- Preheat oven to 400ºF. Lightly spray a 11x7-inch pan with cooking spray. Set aside.
- Place chicken breasts in prepared pan.
- Whisk together dressing, preserves and dry soup mix. Pour over chicken.
- Bake uncovered for 40 to 50 minutes, until chicken is cooked through.
