Best Corn Pudding Recipe
The name says it all - Damn Good Corn Pudding! This recipe is adapted from 12 Bones BBQ in Asheville, NC. We had lunch at 12 Bones on our most recent trip and really enjoyed it. I got the Corn Pudding as one of my sides and it was DELICIOUS!!! I immediately bought the 12 Bones Cookbook on my phone and bookmarked this recipe to try at home.
This Damn Good Corn Pudding is a great side dish for the upcoming holidays, cookouts, tailgates, potlucks. It is super easy to make and it is SO freaking good. I could just eat this Damn Good Corn Pudding as my main dish. I honestly can't get enough of it!
How To Make Damn Good Corn Pudding
This Damn Good Corn Pudding is very easy to make. Start with beating together eggs, heavy cream, and butter. Next add some creamed corn, green onions, and corn kernels. Finally stir in flour, sugar, baking powder, salt, cumin, and coriander. Pour the corn pudding into a baking dish and bake.I made this Damn Good Corn Pudding in a 9x13-inch pan. The cookbook says to use a larger pan. I made it in the larger pan and it was dry and more like a cake with corn in it. I made the casserole again in the 9x13-inch pan and we both agreed it was much better. It tasted just as good as it was in the restaurant.
I used a frozen Silver Queen Corn in this corn pudding. It is my favorite corn. If you have fresh corn, you can most definitely use it in this recipe. You can kick this dish up with a couple of cans of green chiles for Damn Good Southwestern Corn Pudding.
Can Corn Pudding Be Frozen?
You can make this Damn Good Corn Pudding in advance and freeze for later. When ready to reheat, thaw completely and reheat in the microwave or covered in the oven.
Corn Pudding for Thanksgiving and Christmas
This Damn Good Corn Pudding is already on our Thanksgiving menu. It will serve 8 to 10 people. If you don't have that many people, you can certainly half the recipe. ingredients:
- 1-3/4 cups all-purpose flour
- 1-1/4 cups sugar
- 3 Tbsp plus 1 tsp baking powder
- 1-1/2 tsp salt
- 1/2 tsp red pepper flakes (optional)
- 1 tsp cumin
- 1 tsp coriander
- 6 eggs
- 1/2 cup butter, melted
- 2 cups heavy cream
- 1 (14.75-oz) can of creamed corn
- 2 green onions, chopped
- 1-1/2 cups fresh or frozen corn kernels
instructions:
- Preheat oven to 300ºF. Lightly spray a 9x13-inch dish with cooking spray.
- Whisk together flour, sugar, baking powder, salt, cumin and coriander. Set aside.
- In a large bowl, beat together eggs, heavy cream, and butter with a handheld mixer.
- Stir in creamed corn, green onions and corn kernels.
- Add flour mixture and mix until just combined.
- Pour batter into prepared 9x13-inch dish. Cover with foil.
- Bake covered for 1 hour. Remove foil and bake an additional 30 minutes.
