Today I am sharing a twist on the traditional holiday Green Bean Casserole. I've got a delicious Green Bean & Artichoke Casserole - fresh green beans, artichoke hearts, bread crumbs, parmesan cheese, and french fried onions. This Green Bean & Artichoke Casserole is simple to make. Start with sauteing an onion in some olive oil. Add some fresh cut green beans and garlic and cook for a couple of minutes. Stir in some chopped artichoke hearts, Italian bread crumbs, Italian seasoning, parmesan cheese, heavy cream, and a dash of cayenne. Transfer mixture to a 9x13-inch baking dish and top with french fried onions. Pop it in the oven and you are done!

ingredients:
- 1 medium onion, chopped
- 1 Tbsp olive oil
- 1/2 tsp minced garlic
- 1-1/2 lb fresh green beans, cut into 1-inch pieces
- 1/2 cup Italian seasoned bread crumbs
- 3 (14-oz) cans artichoke hearts, drained and chopped
- 1 cup grated parmesan
- dash cayenne pepper
- 1/2 tsp Italian seasoning
- 1/3 cup heavy cream
- salt and pepper, to taste
- 1 (2.8-oz) can french fried onions
instructions:
- Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
- In a skillet over medium-high heat, heat olive oil. Add onion and cook until tender. Add garlic and cook 1 minute longer. Add fresh green beans and cook an additional 3 minutes.
- Remove skillet from heat, add bread crumbs, artichoke hearts, parmesan cheese, cayenne, Italian seasoning, heavy cream, salt, and pepper.
- Transfer mixture to prepared pan. Top casserole with french fried onions.
- Bake for 25 to 30 minutes.
NOTES:
Make prepare through step 4 and refrigerate or freeze for later. Can also freeze baked casserole and reheat.
