The BEST Grilled Chicken Fajitas Recipe

Chicken fajitas are my go-to when we eat at a Mexican restaurant. I LOVE them! We don't eat Mexican out very much, so I am always looking for good Tex-Mex recipes to make at home. I was thrilled when my friend, The Food Hussy, shared this recipe from Carlos O'Kelly's. She has a friend that works at Carlos O'Kelly's and he shared their chicken fajita recipe with her. YAY!

The recipe he sent over was just sort of a recipe. They no longer make the fajitas in-house at Carlos O'Kelly's. The fajitas are sent over precooked now. The recipe I received was how they used to make them years ago (pre-1996) without exact measurements. I did my very best to recreate the recipe. I don't know if these taste exactly like the original, but they are DELICIOUS!

How to Make Homemade Chicken Fajitas

These Grilled Chicken Fajitas are very simple to make. Simply season the chicken with some garlic, seasoned salt, and black pepper. Let the chicken refrigerate for a few hours. While the chicken is resting, make the chipotle basting sauce. The chipotle basting sauce is canned chipotles with adobo sauce, garlic, oil, butter, and liquid smoke. You want to process the chipotle sauce in the food processor until it is smooth. You aren't going to use very much of the sauce. You can certainly cut the recipe down if you don't plan on saving it for use later.

How to Cook Grilled Chicken Fajitas on a Charcoal Grill

My number one tip for grilling chicken is to pound the chicken breasts to an even thickness before seasoning and cooking. We place the chicken in a ziplock bag and use a flat meat mallet to pound out the thick end. This will make sure the chicken cooks evenly and you don't have half dry-half cooked chicken.

My number two tip for grilling chicken on a charcoal grill is to use a charcoal chimney starter. It makes a HUGE difference when grilling on charcoal. There is no yucky lighter fluid taste on the food.

The chicken breasts will take about 9 to 12 minutes to cook on a charcoal grill. Use a meat thermometer to check the internal temperature. The chicken should be 165ºF in the thickest part of the breast. You don't want any pink!

How to Cook Grilled Chicken Fajitas Without A Grill

You can still cook these Chicken Fajitas if you don't have a grill. My preferred method is to cook the chicken in a skillet for 3 or 4 minutes per side and then transfer the chicken to the oven preheated to 425ºF for an additional 10 minutes. Once the chicken is cooked, brush it with the chipotle sauce.

What Goes With Chicken Fajitas For Dinner?

Chicken fajitas are traditionally served with onions and bell peppers. I usually just throw some in a skillet and let them cook while the chicken grills. ingredients:

  • 4 boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp seasoned salt
  • 1/2 tsp black pepper
  • 1/2 (7-oz) can chipotle peppers in adobo sauce
  • 1 tsp garlic powder
  • 4 or 5 drops of liquid smoke
  • 1/4 cup vegetable or canola oil
  • 1 cup melted butter

instructions:

  1. Season both sides of chicken breasts with 1 tsp garlic powder, seasoned salt and black pepper. Refrigerate until ready to grill.
  2. In the bowl of a food processor, add chipotle peppers in adobo sauce, 1 tsp garlic powder, and liquid smoke. Pulse 4 or 5 times.
  3. With the food processor running, slowly stream vegetable oil and melted butter into the food processor. Process until smooth. Set aside.
  4. Prepare grill. Grill chicken approximately 9 to 12 minutes, until internal temperature reaches 165ºF.
  5. Brush chicken with chipotle sauce on both sides. Cook an additional minute.
  6. Remove chicken from grill and slice into strips.

NOTES:

Can use chicken thighs or chicken tenders. 
If you are sensitive to heat, cut the chipotle peppers in half.
Can make chipotle sauce in advance and refrigerate. 
You will have leftover chipotle sauce. Serve leftover sauce on the side.
