I am not a big morning breakfast person, but I love a good breakfast casserole for lunch or dinner. This Ham & Potato Breakfast Casserole is a favorite at our house. Ham, creamy potatoes, cheese, and eggs. YUM! All you need is some fruit and biscuits and you are set! This casserole is super easy to make and tastes great! SO creamy and packed full of amazing flavor! How to Make Ham & Potato Breakfast Casserole
As I said, this Ham & Potato Breakfast Casserole is super easy to make. Start with some diced ham. I like to throw it in the skillet to remove any excess moisture before adding it to the casserole dish. Ham has a ton of extra moisture and can make your casserole runny if you don’t get the excess water out. Once the ham is cooked, combine it with some chunky potato soup and place in a casserole dish. Top with shredded cheddar cheese. Whisk together eggs, milk, and pepper. Pour the egg mixture over the ham and cheese and bake. SO easy! Can Ham & Potato Breakfast Casserole be Made in Advance and Frozen?
You can assemble the casserole ahead of time and refrigerate or freeze for later. If baking after freezing, thaw completely in the refrigerator and bake as directed below. If reheating after freezing, thaw and reheat in the microwave or covered in the oven. I suggest 350ºF for 30 to 40 minutes in the oven. What to Serve with Ham & Potato Breakfast Casserole
