We made this Instant Pot Chicken Cordon Bleu Pasta twice in the past week. We LOVE it!! It is my new favorite way to use up leftover holiday ham! The best part is this pasta takes less than 20 minutes from start to finish! I love that everything cooks in the Instant Pot - even the pasta!
This Instant Pot Chicken Cordon Bleu Pasta can be made with raw or cooked chicken. I've made it both ways, and it is equally delicious. For the raw chicken, I just cut up chicken tenders into bite sized pieces and sauté it in the Instant Pot. For the cooked chicken, I use rotisserie chicken and toss it in with everything else.
We really enjoyed this Instant Pot Chicken Cordon Bleu Pasta. It is so creamy and delicious! It has tons of great flavor from all the different cheeses. This has quickly become a favorite in our house!

Instant Pot Chicken Cordon Bleu Pasta

ingredients:
- 1-lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup cooked ham , diced
- 2 Tbsp olive oil
- 1 Tbsp dijon mustard
- 1 garlic clove, minced
- 1 (8-oz) package cream cheese
- 1-lb dry penne pasta
- 3 cups low-sodium chicken broth
- 2 cups water
- 1 (5-oz) package shredded Swiss cheese
- 1/2 cup grated parmesan cheese
instructions:
- Preheat Instant Pot on “Sauté” setting; add oil and chicken stirring to coat. Cook chicken 2–3 minutes.
- Add ham, dijon mustard, garlic, cream cheese, pasta, broth, and water to pot.
- Close lid, lock pot, select “Manual” setting and 4 minutes time. Cook pasta until time is up, then quick release and open Pot.
- Stir in Swiss and parmesan cheese until combined; let pasta set 5 minutes to thicken. Serve immediately.
