Since going out for Mexican isn't an option, we usually whip up our own fiesta. These Low-Carb Keto Tacos are super delicious and on our new year's diet plan. How are tacos low carb, you ask? The shells are made out of cheese! WHOA! How cool is that? I baked the cheese on a non-stick pan liner and then set them inside a muffin cup to cool and set up into a cup shape.
The filling for these Low-Carb Keto Tacos is seasoned with Mrs Dash Southwestern Chipotle seasoning. It has zero carbs and zero sodium! I added a can of diced tomatoes and green chiles for some zing. We topped our tacos with more cheese, sour cream and a dollop of guacamole. Wholly guacamole Acocado Verde Dip is super low in carbs and adds lots of great flavor to these tacos.

ingredients:
- 2 cups shredded Mexican cheese blend
- 1 lb ground beef or turkey
- 1 (1-oz) package taco seasoning
- 1 (10-oz) can diced tomatoes and green chiles
- 1/3 cup water
instructions:
- Preheat oven to 350ºF. Line a baking sheet with a Silpat or parchment paper.
- Divide cheese into 4-inch circles. Bake for 5 to 7 minutes, until the cheese is bubbly and the edges start to brown.
- Remove from oven and let cool slightly, about 2 minutes. Carefully remove from pan and press into cups of a standard muffin pan. Cool completely.
- In a large skillet over medium-high heat, cook ground beef until no longer pink. Drain fat.
- Add taco seasoning, diced tomatoes and green chiles and water. Bring to a boil. Reduce heat and simmer for 5 minutes.
- Add taco meat to cheese shells. Top with your favorite taco toppings
