Easy Low Carb Taco Casserole

The holidays are super hectic and the new year is a great time to slow down and hit the reset button on your diet. We are trying to incorporate more low carb recipes into our diet. This Low Carb Taco Casserole is perfect for taco night! SO much amazing flavor. Top the casserole with your favorite taco toppings - salsa, lettuce, tomatoes, and guacamole. You will never miss the tortillas!

How to Make Low Carb Taco Casserole with Ground Beef

This Low Carb Taco Casserole is super easy to make. Start with browning some ground beef or ground turkey. Drain the fat, add a packet of taco seasoning and a can of diced tomatoes and green chiles. Let that cook for a few minutes and transfer to a baking dish. Top the taco meat with some cheese. Next, whisk together some eggs, sour cream, and heavy cream. Pour the egg mixture over the taco meat and bake.

This taco casserole would be great with some fresh onion and bell peppers. I suggest adding the onion and peppers to the ground beef and let them soften while the beef cooks. I used shredded cheddar cheese. Feel free to swap it for any cheese you prefer - pepper jack, white cheddar, Monterey jack.

Can Low-Carb Taco Casserole be Frozen?

You can make this Low-Carb Taco Casserole in advance and refrigerate overnight or freeze for later. To bake after freezing, thaw completely in the refrigerator and bake as directed below. To reheat after freezing baked casserole, thaw completely and reheat in the microwave or covered in the oven at 350ºF for about 30 minutes.

ingredients:

• 1 pound ground beef
• 1 (1-oz) package taco seasoning
• 1/3 cup water
• 1 (10-oz) can diced tomatoes and green chiles, undrained
• 1 cup shredded cheddar cheese
• 4 large eggs
• 1/2 cup milk or heavy cream
• 1/2 cup sour cream

instructions:

1. Preheat oven to 350ºF. Lightly spray an 8x8-inch or 11x7-inch pan with cooking spray.
2. Cook ground beef in a skillet over medium heat until no longer pink. Drain fat. Add taco seasoning, water, and diced tomatoes and green chiles. Simmer for 5 minutes.
3. Spread taco meat in the bottom of the prepared pan. Top with shredded cheese.
4. Whisk together eggs, milk/heavy cream, and sour cream. Pour on top of the beef mixture.
5. Bake, uncovered, for 30 to 35 minutes.

NOTES:

Can use ground turkey. Can make in advance and refrigerate overnight or freeze for later.

To bake after freezing, thaw completly and bake as directed above.

Can double recipe abd bake in a 9x13-inch pan.
