One Pot Chicken Queso Pasta - everything cooks in the same pan, even the pasta! Only 6 ingredients! Chicken, taco seasoning, chicken broth, salsa, pasta and velveeta. Everyone cleaned their plates! Quick, easy Mexican recipe that is ready in 20 minutes!
I love one-pot meals. They are total life-savers during the week. No prep, only one dish and dinner is ready in about 20 minutes! You can't beat that!! We loved every single thing about this pasta! Chicken, cheese, pasta and salsa. All of my favorites in one dish. I used Trader Joe's salsa because it is my favorite salsa. If you don't have Trader Joe's, just use your favorite jarred salsa. Just remember that all of the heat in this dish comes from the salsa, so use mild if you are worried about the heat.
This was a HUGE hit in our house. We both cleaned our plates and went back for seconds. YUM! Chicken Legs favorite part about this dish was that there was only one pan to clean up! This is a great weeknight meal that everyone will love.
One Pot Chicken Queso Pasta
serves 4

- 1 lb boneless skinless chicken
- 1 Tbsp southwest seasoning or taco seasoning
- 1 Tbsp vegetable oil
- 3 cups chicken broth or water
- 8 oz elbow macaroni, uncooked
- 12oz Velveeta, cubed
- 1 cup salsa
Cut chicken into bitesize pieces and season with southwest or taco seasoning.
Pour oil into a 12-inch skillet and cook chicken over medium-high heat until no longer pink.
Add chicken broth and macaroni. Bring to a boil, cover and reduce heat to low. Cook for 15 to 17 minutes, until pasta is cooked and most of the liquid is absorbed.
Stir in cheese and salsa. Cook over low heat until cheese is melted.
Serve immediately.
