Peanut Butter Frito Cookies
Peanut Butter Frito Cookies - sweet and salty goodness! These cookies are CRAZY good! Sweet and Salty in every bite. We could not stop eating these cookies. YUM! Great for parties and tailgating.
One of my favorite snacks is a Frito with peanut butter on top. I know it sounds crazy (at least Chicken Legs said so), but it tastes really good. Well, if you love Fritos and peanut butter like I do!
I started to wonder what a peanut butter cookie with Fritos in it would taste like. I decided to give it a whirl. Well, it tastes great. Even Chicken Legs agreed! Sweet and salty in one bite!!! The cookies were soft with a little crunch from the Fritos. We both had a hard time controlling ourselves around these cookies! The recipe make a ton, so they are perfect for sharing. I'm pretty sure that I will be taking a batch to our tailgate this weekend.

Peanut Butter Frito Cookies

ingredients:
- 1 cup brown sugar, firmly packed
- 1 cup white sugar
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup creamy peanut butter
- 1/2 tsp salt
- 2 large eggs
- 2 tsp vanilla
- 2 tsp baking soda
- 2 cups flour
- 3 cups crushed Frito corn chips
- 1/2 cup sugar for rolling
instructions:
- Preheat oven to 350ºF.
- Cream together the sugars, butter, shortening, and peanut butter. Add the eggs and vanilla. Mixing well.
- Sift the dry ingredients together and add gradually until blended well. Mix in the crushed Frito corn chips.
- Scoop cookie dough using a medium cookie scoop. Roll cookie dough balls into 1/2 cup sugar. Place on an ungreased cookie sheet (don't mash with a fork).
- Bake for 11-13 minutes.
