I was first introduced to Pineapple Casserole on a trip to the beach a few years ago. I’ve been making it ever since! I have another version on the blog - . The original recipe is a bit controversial because it has cheese. I know it sounds weird, but it is really good. I decided to make another version of Pineapple Casserole without cheese. It is equally delicious! I honestly can’t decide which version is my favorite!!!

How To Make Pineapple Casserole
This Pineapple Casserole is a sweet side dish. There are only a few simple ingredients - butter, sugar, eggs, pineapple, nutmeg, and bread. I like to sprinkle a couple of tablespoons of brown sugar on top for some color. You could even add some crushed Ritz crackers on top if you like. We always serve it as a side dish, but you could almost serve it as a dessert. It is almost a Pineapple Bread Pudding.This recipe is great for potlucks, Easter, Thanksgiving, and Christmas. The recipe is very easy to double, triple or even quadruple for a crowd. You can make it in advance and refrigerate it until you are ready to bake.

Pineapple Casserole Goes Perfectly With Ham
As I said, Pineapple Casserole goes great with ham. I think pineapple and ham is a classic combination. We serve this hot out of the oven, but it is still good cooled to room temperature. We make this for all the holidays - Easter, Thanksgiving, and Christmas. We also love to make it for summer cookouts! Give it a try! I promise it will become a family favorite! ingredients:
- 1/2 cup butter, softened
- 3/4 cup sugar
- 4 eggs
- 1 (20-oz) can crushed pineapple
- 1 tsp lemon juice
- 1/4 tsp nutmeg
- 3 cups stale white bread, cubed
- 2 Tbsp brown sugar, optional
instructions:
- Preheat oven to 350ºF. Lightly spray an 8x8 or 9x9-inch pan with cooking spray. Set aside.
- In a medium mixing bowl cream butter and sugar and add eggs and beat well to blend. Add pineapple and carefully stir to blend, add lemon juice and nutmeg. Fold in bread cubes.
- Spoon pineapple mixture into prepared baking dish. Sprinkle with brown sugar, if desired.
- Bake uncovered for 45 minutes.
