Do you need a last minute dessert for your Memorial Day cookout? Look no further! This Pineapple Pie is super easy to make and it tastes delicious!! Sweet pineapple and coconut pie - what's not to love?!?! We served the pie as is, but it would be great with a dollop of whipped cream or vanilla ice cream.
This Pineapple Pie only takes a couple of minutes to whip up. Basically just whisk everything together, pour into a deep dish pie crust and bake. Easy Peasy!! The pie can be served warm or cold. I prefer to make this pie a day in advance and refrigerate it overnight. I take the pie out of the refrigerator about 30 minutes before serving. If you want to serve the pie warm, just pop each slice in the microwave for a few seconds.
This Pineapple Pie is perfect for any upcoming potlucks and cookouts! It transports easily and everyone LOVES it!!
