This Pulled Pork Cornbread Casserole is a new favorite! Pulled Pork, BBQ sauce, and cheese on top of yummy cornbread. Seriously delicious! This is a great way to use up any pulled pork you might have left from Memorial Day. If you don't have leftover pulled pork, you can throw a pork butt in the slow cooker or Instant Pot or buy some prepared pulled pork at the grocery store. I actually really LOVE the pulled pork from Costco. It is so smoky and delicious!!
We really loved this Pulled Pork Cornbread Casserole. It is comfort food at its best! The sweet cornbread crust goes perfectly with the pulled pork. We served this with some coleslaw, pickles and extra BBQ sauce. All you need is a big ol' scoop of some Quick Baked Beans and you are all set! We had the leftovers for lunch the next day and it was just as good! I love when I can get two meals out of one night of cooking! Give this a try ASAP! I promise that you won't be disappointed.
