This Overnight Sausage Pancake Breakfast Casserole was a HUGE hit in our house. OMG! Think Sausage McGriddle with egg. Pancakes with maple sausage and baked in a sweet egg custard. Smother it with maple syrup and you've got yourself an AMAZING meal! We have eaten this for breakfast, lunch, and dinner. This Overnight Sausage Pancake Breakfast Casserole. It starts with frozen pancakes. This was my very first time purchasing frozen pancakes. They were GREAT in this casserole! You can certainly make your own pancakes, but the frozen pancakes were so easy to use and held up great in the casserole.Brown some yummy maple sausage in the skillet. Once it is no longer pink, drain the fat. Cut the frozen pancakes in half and place in the baking dish. Sprinkle the cooked sausage on top of and in between the pancakes. Whisk together some eggs, milk, heavy cream, vanilla, and maple syrup. Pour that over the pancakes and refrigerate overnight. Pop the casserole in the oven in the morning and prepare to be wowed!

ingredients:
- 20 to 24 frozen pancakes from a (2-lb 1-oz) package, thawed
- 1 lb maple sausage
- 6 eggs
- 1-1/2 cups heavy cream
- 1 cup whole milk
- 1 tsp vanilla
- 2 Tbsp sugar
- 2 Tbsp maple syrup, plus more for serving
instructions:
- Cut pancakes in half and place cut side down in a lightly greased 9x13-inch pan.
- Cook sausage in a skillet over medium-high heat until no longer pink. Drain fat. Sprinkle cooked sausage on top of and in between pancake slices.
- Whisk together eggs, heavy cream, milk, vanilla, sugar, and maple syrup.
- Pour egg mixture over pancakes.
- Cover casserole dish and refrigerate overnight.
- Remove casserole from refrigerator and uncover. Preheat oven to 350ºF.
- Bake casserole uncovered for 50 to 60 minutes until center is set.
- Let stand 5 minutes before serving with extra maple syrup.
NOTES:
Can substitute turkey sausage for maple sausage. Can substitute 20 to 24 2-1/4 inch homemade pancakes for frozen.
