These Smothered Pork Chops are hard to beat! Boneless pork chops and rice smothered in cheese and bacon. YES please!!!! This casserole is so easy to make and it tastes fantastic. I mean, it has cheese and bacon. How could it be bad?!?!
As I said, this was super easy to make. It literally took less than 10 minutes to assemble and it was ready for the oven. Whip up some green beans and biscuits while these Smothered Pork Chops are baking and dinner will be on the table in about 30 minutes. You seriously can't beat that!
I like to pan sear the pork chops before baking them. I like for the pork chops to have a little color on them. This also helps speed up the baking time. If you don't want to cook the pork chops for a few minutes in the skillet, just add some time to the baking time. You just need to make sure that the pork chops reach an internal temperature of 145ºF.

ingredients:
- 4 boneless pork chops (about 2 pounds)
- 1/2 tsp seasoned salt
- 1 Tbsp vegetable oil
- 2 cups cooked rice
- 1 (10.75-oz) can Cream of Chicken soup
- 1-1/4 cups milk
- 3/4 cup shredded mozzarella
- 1/2 cup shredded cheddar cheese
- 8 slices bacon, cooked and chopped
instructions:
- Preheat oven to 375ºF. Lightly spray a 9x13-inch pan with cooking spray.
- Spread cooked rice in bottom of prepared pan.
- Sprinkle pork chops with seasoned salt. Heat oil in a skillet over medium-high heat. Add pork chops and cook 2 to 3 minutes per side, until starting to brown. Place pork chops on top of rice.
- Mix together cream of chicken soup and milk. Pour over pork chops.
- Bake uncovered for 25 minutes. Remove from oven and top pork chops with shredded cheeses. Sprinkle cooked bacon on top of cheese. Return to oven and bake an additional 5 to 10 minutes.
