Our grill is in overdrive this time of year. We probably grill out at least 5 days a week - weather permitting. Today I'm sharing a new pork chop recipe - Sweet & Tangy Pork Chops. The pork chops are marinated in cider vinegar, dijon mustard, garlic, lemon, lime and brown sugar. Sweet from the brown sugar and a little tangy from the cider vinegar and citrus juices. Most of all, they are seriously delicious!
We let these Sweet & Tangy Pork Chops marinate overnight. I usually mix up the marinade before I go to bed. I throw in the pork chops and let them hang out in the fridge until we are ready to fire up the grill. I always think the longer you can marinate, the better. I like to get the maximum flavor!!
We absolutely LOVED these Sweet & Tangy Pork Chops. We used bone-in pork chops that were about 1/2-inch thick. You can use thicker bone-in pork chops or boneless pork chops. You will just need to adjust the cooking time accordingly.
For reference - 145º to 150ºF is Medium-Rare (and delicious), 150º to 155ºF is Medium, 155º to 160ºF is Medium-Well and 160ºF is Well Done. We always go for Medium-Rare to Medium. And YES, it is perfectly SAFE to eat pork chops Medium-Rare per the USDA. Don't overcook your pork!

ingredients:
- 1/4 cup cider vinegar
- 3 Tbsp prepared dijon mustard
- 3 cloves garlic, minced
- 3 Tbsp lime juice
- 4-1/2 tsp lemon juice
- 1/2 cup brown sugar
- 1/2 teaspoons salt
- 1/4 tsp black pepper
- 3 Tbsp olive oil
- 6 pork chops, bone-in or boneless
instructions:
- Whisk together cider vinegar, mustard, garlic, lime juice, lemon juice, brown sugar, salt, pepper and olive oil. Pour marinade over pork chops.
- Refrigerate pork chops in marinade for 8 hours, up to overnight.
- Grill pork chops until reached desired temperature. Cook until internal temperature is a minimum of 145ºF.
