Easy Broccoli Casserole Recipe
The name of this recipe says it all - YUM! This Yum Yum Broccoli Casserole is a favorite! It is super easy to make and tastes fantastic! Creamy and cheesy broccoli topped with stuffing. YUM! We ate this with dinner last week and loved it! I'm not even a big broccoli fan and I thought it was delicious! Give this casserole a try the next time you need a quick and easy side dish. I am sure it will be a hit!
How to Make Yum Yum Broccoli Casserole
As I said, this Yum Yum Broccoli Casserole is SUPER easy to make. I can have this ready to bake before the oven has fully preheated! Simply mix together broccoli, sour cream, cream of chicken soup, cheddar cheese, onion powder, garlic salt, and pepper. Spread the broccoli mixture into a baking dish. Top the casserole with a box of stuffing and some chicken broth. Pop it in the oven and bake.
I used a bag of frozen broccoli cuts in this recipe. I thawed the broccoli before baking so the casserole wouldn't be watery. I haven't made this casserole with fresh broccoli, but I think it would be just fine. You could also add some bacon - YUM YUM YUM!
Can Broccoli Casserole be Frozen?
You can make this Yum Yum Broccoli Casserole ahead of time and refrigerate or freeze for later. To bake after freezing, thaw completely and bake as directed below. To reheat after freezing, thaw completely. Cover with foil and bake at 350ºF for 30 to 40 minutes. It takes as long to reheat the casserole as it does to just bake it, so I usually just freeze casseroles like this unbaked.

ingredients:
- 1 (32-oz) package broccoli cuts, thawed
- 1 (10.75-oz) can cream of chicken soup, undiluted
- 1 cup sour cream
- 1/4 tsp onion powder
- 1/4 tsp garlic salt
- 1/4 tsp pepper, or to taste
- 1-1/2 cups shredded cheddar cheese
- 1 (6-oz) box stuffing mix
- 1 cup chicken broth
instructions:
- Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
- Mix together broccoli, cream of chicken soup, sour cream, onion powder, garlic salt, pepper, and cheddar cheese. Spread into prepared pan.
- Sprinkle the uncooked stuffing mix on top of casserole. Pour chicken broth evenly over the stuffing mix.
- Bake for 30 to 40 minutes.
NOTES:
Can use any cheese in place of cheddar cheese. Can freeze casserole for a quick side dish later. To bake after freezing, thaw completely and bake as directed above. Use vegetable broth and cream of mushroom soup for a vegetarian dish.
