I used my favorite burger recipe and added bacon and cheese and then baked that mixture in mini biscuit cups. O-M-G! YUM! They are PERFECT for tailgating this season. Not only are these Bacon Cheeseburger Biscuit Bites delicious, but they are also super easy to make. Make the meatballs, stuff into the biscuit cups, and bake. If you like to make recipes ahead of time, you can mix up the cheeseburger meatballs and finish assembling them when you are ready to bake.
To make these Bacon Cheeseburger Biscuit Bites, start by making the bacon cheeseburger meatballs. Combine ground beef, an egg, tomato juice, cooked bacon, and cheddar cheese. Form the ground beef mixture into 40 meatballs. Next, separate each biscuit into two rounds and place them into a MINI muffin pan. Place the meatballs into the biscuit cups and bake.
Please note that the ground beef is not cooked. You use the ground beef raw and it bakes along with the biscuits. I promise it will be fully cooked after it has baked.
You can bake these Bacon Cheeseburger Biscuit Bites and reheat before serving. To reheat either cook in the microwave until warm or wrap in foil and bake in the oven until reheated.
Tips For Making Bacon Cheeseburger Biscuit Bites
- Use a silicone mini muffin pan. It is SO much easier to get the biscuit bites out of silicone pans than traditional metal pans.
- Use a wooden tart tamper to shape the biscuit shells.
- Dip the tart shaper into flour before pressing into each biscuit.
- Use a kitchen scale to evenly divide the bacon cheeseburger mixture.
- Use precooked bacon for easy preparation.
- Use cans of the smaller refrigerated biscuits. You will need four cans of 6-oz biscuits. You can also use two cans of 7.5-oz refrigerated biscuits if you can find them.

We dipped these Bacon Cheeseburger Biscuit Bites in a quick homemade Pub Sauce. The sauce is made with mayonnaise, brown sugar, soy sauce, Worcestershire sauce, chives, garlic, and black pepper. I like to make the sauce at least a day in advance so the flavors have time to meld together.I cannot wait to make these Bacon Cheeseburger Biscuit Bites again. They are seriously the best! As I said, these are great for tailgating. If you aren't into tailgating, they are also great for parties, lunch, and dinner. We've eaten them in the parking lot for tailgating parties and for a quick lunch/dinner. They are delicious any time of the day! ingredients:
Biscuit Bites
- 1 lb lean ground beef
- 3 Tbsp tomato juice
- 1 egg
- 1/3 cup chopped cooked bacon
- 2 cups shredded cheddar cheese
- 4 (6-oz) cans refrigerated biscuits (20 total biscuits)
Pub Sauce
- 3/4 cup mayonnaise
- 1 Tbsp brown sugar
- 2 Tbsp soy sauce
- 1 Tbsp Worcestershire sauce
- 1 Tbsp chopped chives
- 1 tsp minced garlic
- 3/4tsp black pepper
instructions:
- Preheat oven to 400ºF. Spray mini muffin pans with cooking spray.
- Remove biscuits from cans and separate each biscuit into two layers, making 40 total biscuit layers. Press one layer of biscuit on the bottom and up the sides of a cup of a lightly greased MINI muffin pan. Repeat with remaining layers.
- Mix uncooked ground beef, tomato juice, egg, bacon, and cheese gently until well blended. Shape into 40 balls of equal size.
- Place hamburger ball into each biscuit cup.
- Bake for 12 to 15 minutes or until biscuits are browned.
- To make Pub Sauce, whisk together all ingredients. Serve with Bacon Cheeseburger Biscuit Bites.
NOTES:
Can subsitute 2 cans of 7.5-oz refrigerated biscuits (20 biscuits total).
Can make in advance and reheat.
Can use ground turkey instead of ground beef.
Can use turkey bacon instead of regular bacon.
