Cajun Black-Eyed Peas

The best part is that they are super easy Cajun Black-Eyed Peas

These are my new favorite Black-Eyed Peas. The best part is that they are super easy! This starts with canned black-eyed peas and adds tons of great flavor from bacon and cajun seasoning. We both could have made a meal out of these peas. Just add some fried okra and cornbread and we would be happy, happy, happy!

If you want to reduce the sodium content in this dish, rinse the peas before adding them to the pot and use reduced sodium chicken broth. I almost always use reduced sodium chicken broth, and I don't think you loose any flavor with it. Either way, these black-eyed peas will be delicious!

Yield: serves 6 to 8

Cajun Black Eyed Peas

prep time: 5 MINScook time: 25 MINStotal time: 30 mins

ingredients:


  • 4 slices bacon, cooked and crumbled
  • 3 (15.8-oz) cans black-eyed peas, drained
  • 1 (14-oz) can chicken broth (can use reduced sodium)
  • 1/4 tsp hot sauce
  • 1 bay leaf

instructions:


  1. In a large pot, combine peas, chicken broth, hot sauce, cajun seasoning, and bay leaf.
  2. Bring to a boil; reduce heat, and simmer 25 minutes. Stirring occasionally.
  3. Stir in bacon and discard bay leaf before serving.
