I needed a dessert for a party a few weeks ago. Chicken Legs suggested a lemon pie. I didn't want to make my usual lemon pie, so I decided to test out this Frozen Lemon Ice Box Pie. Well, it is really a Frozen Lemon Ice Cream Pie since the pie filling is a no-churn lemon ice cream.
Have you ever made no-churn ice cream? I love no-churn ice cream. It is made with whipped cream and sweetened condensed milk. I got to thinking that a lemon ice box pie is basically sweetened condensed milk and lemon juice. SO, why not make a Frozen Lemon Ice Box Pie?!?!
It turned out fantastic! The pie comes right out of the pan after it is frozen. Perfect slices every time. All you need is a little dollop of whipped cream and dessert is served! This is the best way to cool off in this brutal summer heat!

Frozen Lemon Icebox Pie

ingredients:
- 1 store-bought graham cracker crust
- 2 cups heavy cream
- 1 (14-oz) can sweetened condensed milk
- 3 lemons (1 zested, 3 juiced)
instructions:
- Whip heavy cream until stiff peaks. Fold in sweetened condensed milk, zest of one lemon, and juice from all three lemons.
- Spread ice cream into graham cracker crust. Cover with plastic wrap and place in freezer. Freeze for 6 hours, or until set.
