Breakfast casseroles are a favorite at our house. We love to eat them for breakfast, lunch, and dinner. This Ham & Cheese Crescent Breakfast Casserole is a new favorite. Ham and cheese baked in crescent rolls and eggs. O-M-YUM! The flavors are fantastic! This would be perfect for Christmas morning or New Year's Day with some leftover holiday ham,
How To Make Ham & Cheese Crescent Breakfast Casserole
This Ham & Cheese Crescent Breakfast Casserole is easy to make. Start with making the ham and cheese filling. Combine ham, cheese, cream cheese, Worcestershire sauce, dijon mustard, and brown sugar. Next, open the cans of crescent rolls and cut them in half, making two triangles. Top each triangle with a heaping scoop of the ham mixture. Place crescent rolls into a baking dish. Sprinkle rolls with poppy seeds. Whisk together eggs and milk. Pour the egg mixture over the rolls and bake.I find it easier to cut the crescent rolls in half with a pizza cutter. I like to use a small cookie scoop to scoop the ham mixture onto the crescent rolls.
You can make the ham filling ahead of time and refrigerate until ready to assemble the casserole.

ingredients:
- 16-oz cooked ham, chopped
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded swiss cheese
- 8-oz cream cheese, softened
- 1 Tbsp dijon mustard
- 1 Tbsp Worcestershire sauce
- 1 Tbsp brown sugar
- 1/4 tsp onion powder
- 1 (8-count) tube refrigerated crescent rolls
- 1 (4-count) tube refrigerated crescent rolls
- 1 Tbsp poppy seeds
- 5 eggs
- 1-1/2 cups milk
instructions:
- Preheat oven to 350ºF. Spray a 9x13-inch baking dish with cooking spray.
- Mix together ham, cheddar, swiss, cream cheese, dijon mustard, Worcestershire, brown sugar, and onion powder.
- Separate crescent rolls into 12 triangles. Cut each triangle in half, forming two triangles. (24 total) Scoop one tablespoon of ham mixture on the long end of each triangle. Roll up crescents and place in baking dish. Sprinkle tops of crescents with poppy seeds.
- Whisk together eggs, and milk. Pour over crescent rolls.
- Bake for 30 to 40 minutes, until egg mixture, is set.
NOTES:
Can make in advance and refrigerate overnight. Can make the ham mixture ahead of time and refrigerate until ready to assemble the casserole. Can freeze baked casserole for later. To reheat, thaw completely and reheat in the microwave or covered in the oven for about 30 minutes.
