This Black-Eyed Pea Dip is a quick and easy recipe that is great for any upcoming gathering. Loaded with sausage, cream cheese, and Rotel. You really can't go wrong with this yummy dip!
How to Make Hot Sausage Black-Eyed Pea Dip with Rotel
This Hot Sausage Black-Eyed Pea Dip is super easy to make. There are only 6 ingredients - sausage, cream cheese, Rotel diced tomatoes, and green chiles, sour cream, cheddar cheese, and black-eyed peas. Start with cooking the sausage. Once the sausage is cooked add the remaining ingredients and bake. SO easy!I used a roll of Hot Jimmy Dean sausage. You can substitute regular sausage or even turkey sausage if you prefer. I used a can of regular Rotel diced tomatoes and green chiles. If you are worried about the heat, make sure to use a can of mild Rotel or a can of plain diced tomatoes. You can make this dip a day or two in advance and refrigerate until ready to bake.

ingredients:
- 1 lb hot pork sausage
- 2 (15-oz) cans black-eyed peas, drained and rinsed
- 1 (10-oz) can diced tomatoes and green chiles, drained
- 1 (8-oz) package cream cheese, softened
- 1 cup sour cream
- 2 cups shredded cheddar cheese
instructions:
- Preheat oven to 350ºF. Spray a 12-inch skillet or 9x13-inch pan with cooking spray.
- In a skillet over medium-high heat, cook sausage until no longer pink. Drain fat.
- Combine cooked sausage with remaining ingredients. Spread dip into prepared dish/skillet.
- Bake for 30 minutes, until bubbly.
NOTES:
Can make in advance and refrigerate until ready to bake. You may need to add a few minutes to the cooking time if baking straight from the refrigerator.
