Make ahead tip - I cooked my sausage the night before and put it in a ziplock back in the refrigerator. I just pulled the cooked meat out of the fridge when I got home. It took longer for the oven to preheat than it did to assemble the casserole. We served this with a salad and garlic bread. It was one of the best things we ate all week. This is great for a crowd and also reheats well. Put this on your menu right away!

ingredients:
- 1 (25-oz) bag frozen ravioli
- 1 (26-oz) jar spaghetti sauce
- 2 cups shredded mozzarella
- 1 lb Italain sausage
- 1 (15-oz) container ricotta
- 1 egg
- 1 Tbsp dried parsley
instructions:
- Preheat oven to 350ºF.
- In a skillet, cook sausage until no longer pink. Drain fat and set aside.
- Mix together ricotta, egg and parsley. Set aside.
- Lightly spray a 9x13-inch pan with cooking spray. Spread 1/3 of the spaghetti sauce in the bottom of the pan. Layer half of the ravioli on top of the sauce. Spread ricotta mixture on top of ravioli. Top with cooked sausage and 1/2 of the mozzarella cheese. Layer the remaining ravioli.
- Spread remaining sauce on top of ravioli and top with remaining mozzarella cheese.
- Bake uncovered for 30 minutes.
