These Homemade Pimento Cheese Buttermilk Biscuits are just like your Grandma used to make. I mean, not my Granny, but I'm sure somebody's Grandma made them. LOL! This is my second time making homemade biscuits, and it turns out that I love making biscuits! We had these for breakfast with some yummy thick-cut bacon. Divine!The recipe for these Homemade Pimento Cheese Buttermilk Biscuits comes from Buzzcat Cafe in Orange Beach, AL. I took my first trip to Orange Beach this past December. OMG! The Orange Beach/Gulf Shores area is AMAZING! The beaches are pristine and the food scene is incredible. I think I gained 10 pounds in the few days I was down there. Buzzcat Coffee & Sweets was my favorite breakfast place. The sweets and treats were crazy delicious. We had the pleasure of meeting the chef, Kim Asbury. She mentioned her famous Pimento Cheese Biscuit recipe was going to be published in an upcoming cookbook. I made sure to pick up a copy so I could make them at home!
How to Make Homemade Biscuits
I was always so intimidated by making homemade biscuits from scratch, but it turns out it isn't very hard. As long as you don't mind getting your hands dirty, you are good. Kim's recipe was published in weight measurements. I have a kitchen scale, so this wasn't a problem for me. I know some of you don't have a kitchen scale, so I took the time to covert the recipe to cups for you. It is always best to weigh the ingredients because people scoop flour differently, but the conversion below should work just fine.There are only a few simple ingredients in these Homemade Pimento Cheese Buttermilk Biscuits. All-purpose flour, sugar, baking powder, salt, unsalted butter, eggs, buttermilk, and pimento cheese. You are going to start by combining the flour, sugar, baking powder and salt. Next, you are going to work in the butter. I like to grate my cold butter instead of cutting it in with a pastry cutter. Add the eggs and buttermilk and get dirty. Use your hands to quickly mix the wet and dry ingredients together. Finally, place the dough on a floured surface and top with the pimento cheese. Fold the dough over itself several times and then cut.
Now, I don't really like pimento cheese, but I loved it in these buttermilk biscuits. It made the biscuits super yummy! I used Palmetto Cheese brand pimento cheese. It is the only prepared pimento cheese I will buy. It tastes just like homemade. You can also make your own pimento cheese. Here is my favorite recipe:
How To Freeze Biscuits
This recipe makes a dozen Homemade Pimento Cheese Buttermilk Biscuits. If you don't need that many at one time, you can freeze some for a quick breakfast later! Make the biscuits as directed below up until the point of baking. Simply place the baking pan in the freezer, and let the biscuit freeze. Once they are frozen, take them off the pan and store in a freezer bag. These really are some of the BEST homemade biscuits I've ever eaten. I crave these biscuits stuffed with bacon. SO good! They also make great buns for BLT sandwiches, turkey sandwiches, ham sandwiches, burgers, chicken - anything! If you aren't a fan of pimento cheese, you can certainly leave out the pimento cheese and make plain buttermilk biscuits. YUM! ingredients:
- 5 cups all-purpose flour (1-1/2 pounds)
- 2 Tbsp sugar (1-1/2 ounces)
- 2 Tbsp baking powder (1-1/2 ounces)
- 2 tsp salt (1/2 ounce)
- 1 cup cold butter (2 sticks)
- 3 eggs
- 1-3/4 cup whole buttermilk
- 1 (12-oz) container pimento cheese
instructions:
- Preheat oven to 425ºF. Line a baking sheet with parchment paper. Set aside.
- In a large bowl, combine flour, sugar, baking powder and salt.
- Grate butter with a box grater. Add to flour mixture. Toss gently with hands.
- Whisk together eggs and buttermilk. Make a well in the middle of the flour mixture. Pour buttermilk mixture into the well.
- Gently mix together the buttermilk mixture and flour mixture with your hands for about 15 to 20 seconds. Make sure not to overmix. The dough will be slightly wet. Place dough on a lightly floured surface and flatten into a rectangle.
- Place pimento cheese on top of the dough and fold over on top of itself 5 or 6 times, until the dough has come together. You may need to add more flour to keep the dough from sticking.
- Pat the dough to 3/4-inch thickness and cut into biscuits. Place biscuits on the prepared baking sheet.
- Bake for approximately 15 minutes, until starting to turn golden brown. Brush tops of cooked biscuits with melted butter, if desired.
NOTES:
I used Palmetto Cheese brand pimento cheese.
Can make biscuits up to step 7 and freeze for later.
To bake frozen biscuits, bake from frozen as directed above adding a few additional minutes to the cooking time.
