Pizza Pierogi Casserole

This Pizza Pierogi Casserole is comfort food at its best!! We cleaned our plates and went back for seconds. We absolutely LOVED this simple casserole. This is a super easy weeknight meal. It also makes a GREAT freezer meal. You can even divide the casserole into two 9-inch pans and bake one and freeze one for later.
I used Italian sausage in this meat sauce. If you aren't a fan of sausage, you can swap it out for ground beef or ground turkey. Either will work great! We topped the casserole with some pepperoni and olives. Feel free to add all of your favorite pizza toppings to the top of the casserole - green peppers, onions, mushrooms. Anything goes!

Pizza Pierogi Casserole

INGREDIENTS:
- 2 (16-oz) packages frozen Four Cheese Medley Pierogies, thawed
- 1 lb hot Italian sausage
- 1 (26-oz) jar spaghetti sauce
- 40 to 50 slices pepperoni
- 2 cups shredded mozzarella cheese
- pizza toppings - olives, mushrooms, green peppers, etc.
INSTRUCTIONS:
- Preheat oven to 375ºF. Lightly spray a 9x13-inch pan with cooking spray. Set aside.
- In a skillet, cook sausage over medium-high heat until no longer pink. Drain fat.
- In a large bowl, combine cooked sausage and spaghetti sauce. Add pierogies and toss to coat.
- Pour pierogies into prepared pan. Top with half of pepperoni slices.
- Top pepperoni with shredded mozzarella cheese. Top cheese with remaining pepperoni slices and pizza toppings of your choice.
- Bake, uncovered, for 35 to 45 minutes.
