These Roasted Garlic Mashed Potatoes are so good! They are going to be the best you've ever had! Loaded with homemade roasted garlic, heavy cream and parmesan. SO easy and SO delicious! These potatoes go great with those Peppered Ribeyes I shared yesterday. They are also easy to double or triple for a crowd. I love that these potatoes are easy enough to whip up on a weeknight but fancy enough for a dinner party.
How to Make Roasted Garlic Mashed Potatoes
These Roasted Garlic Mashed Potatoes are very easy to make. You are going to get the roasted garlic and potatoes going at the same time. Once the garlic is roasted and the potatoes are cooked, simply mash them both together and add some heavy cream, parmesan cheese, butter, parsley, salt, and pepper. It takes about 30 minutes from start to finish.I used russet potatoes for these Roasted Garlic Mashed Potatoes. You could also try this recipe with yukon gold or red potatoes. You can also roast the garlic ahead of time and refrigerate it until you are ready to use.

ingredients:
- 2 heads fresh garlic
- 2 Tbsp olive oil
- 3 pounds potatoes, peeled and diced
- 1/4 cup heavy cream
- 1/4 cup grated parmesan
- 1/4 cup butter, cubed
- 1/4 cup chopped fresh parsley
- 1/2 tsp black pepper
- 1/2 tsp salt, or to taste
instructions:
- Preheat oven to 425ºF.
- Cut tops off of garlic. Drizzle with oil. Wrap in foil and bake for 30 minutes. Squeeze pulp out and set aside.
- Place potatoes in a large pan and cover with water. Bring to a boil and cook 20 to 25 minutes, until fork tender. Drain.
- Place roasted garlic pulp and cooked potatoes in large bowl and mash. Add heavy cream, parmesan, butter, parsley, salt, and pepper. Continue to mash until thoroughly combined.
NOTES:
Can roast the garlic in advance and refrigerate until ready to prepare the potatoes.
