It is a hard combination to beat! This casserole is easy to make and even easier to eat! All you need is a little fruit salad or some cheesy grits and you are set! This Sausage Biscuit Breakfast Casserole is super easy to make. Start with some leftover biscuits. Chop them up and place them in a baking dish. Top the biscuits with cooked sausage and cheese. Whisk together milk and eggs. Pour the egg mixture over the biscuit mixture and bake. Easy Peasy!
Let's talk about the biscuits in this casserole. I used frozen Pillsbury Grands! Biscuits. I baked them ahead of time and chopped them up when I was ready to make the casserole. I have not tried this casserole with baked refrigerated biscuits. The frozen buttermilk biscuits are nice and firm and hold up well in this casserole. The biscuits are best if you can make them a day or two in advance. Leftover biscuits work great! I've seen trays of prebaked Pillsbury biscuits at Sam's Club - they would be perfect for this casserole.
I used a roll of Jimmy Dean sausage for this casserole. You can substitute turkey sausage for the pork sausage in this recipe if you want to reduce the calories. ingredients:
- 7 to 8 frozen Pillsbury Grands! Buttermilk Biscuits, baked
- 1 pound sausage (Jimmy Dean
- 1-1/2 cups shredded cheddar cheese
- 8 eggs
- 2 cups milk
- salt and pepper, to taste
instructions:
- Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
- Chop each biscuit into 6 to 8 pieces. Place chopped biscuits in the bottom of the baking dish.
- In a skillet over medium-high heat, cook sausage until no longer pink and crumbled. Drain fat.
- Sprinkle sausage over biscuits. Top sausage with shredded cheddar cheese.
- Whisk together eggs, milk, salt, and pepper. Pour over biscuit mixture.
- Bake uncovered for 1 hour, or until eggs are set.
NOTES:
Can substitute turkey sausage for pork sausage. Can use your favorite cheese in place of cheddar. Serve casserole with sausage gravy or syrup. Can assemble the casserole and refrigerate or freeze for later. To bake after freezing, thaw completely and bake as directed above.
