How to Make Homemade Turkey Noodle Soup from Scratch
This Turkey Noodle Soup is very easy to make. Start with sautéing some onion, carrots, and celery in a Dutch oven. Add some tomato paste, basil, and Italian seasoning to the pot and cook for a minute. Next, add some turkey broth, diced Italian tomatoes, chopped turkey, and thawed frozen spinach. Bring the soup to a boil and reduce the heat to simmer for about 20 minutes. Season with salt and pepper to taste. About 15 minutes before serving, add some uncooked egg noodles. As soon as the noodles are done, the soup is ready to serve.
I used purchased Turkey Stock for this Turkey Noodle Soup. I bought it at Walmart. If you can't find turkey broth, you can substitute chicken broth. You can also make your own turkey broth with your leftover turkey carcass. Here is my recipe for Slow Cooker Chicken Broth: Just swap the chicken carcass for your turkey carcass.

YES! You can absolutely make this Turkey Noodle Soup in the slow cooker. Sauté the onions, carrots, and celery. Transfer the vegetables to the slow cooker and add all of the remaining ingredients except the noodles. Cook on LOW for 6 to 8 hours. About 20 to 30 minutes before serving, stir in the egg noodles.
Can Turkey Noodle Soup be Frozen?
This Turkey Noodle Soup makes a great freezer meal. We often freeze the leftovers. Let the soup cool and transfer to freezer bags. To reheat, thaw in the refrigerator and reheat on the stove or in the microwave. You may need to add a little broth when reheating.
